The Chef Armando Montaño every month develops a new menu, playing with different ingredients from the old Mexican cuisine with new flavors, textures and the magical touch of the chile, basic ingredient in every dish that El Chilar shows to the world.

The wine list shows almost two hundred labels, traveling around the world from Australia and New Zealand, trough France, Italy, Spain getting to the Mexican Top Wines.

The wine list is designed to match with the menu, also if you need some help the Wine Connoisseur Ulises Mendez gladly will assist you. In 2008 El Chilar has been award with the “Distintivo T” the highest distinction for the tequila service, managing more than seventy labels.
